Pumpkin Soup in the Raw...

The pumpkins are still coming in



This recipe is in the raw
It only needs blending together and warmed up to your taste
Healthy, easy, fast food


This recipe makes enough for 4 to 6 people
When prepared a day ahead, it tastes even better
Freeze for future use
Ingredients:
1 cup chicken broth or water
3 cups chopped pumpkin
1 large chopped sweet potato
1 & 1/2 cups coconut or almond milk
1 clove garlic
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp sea salt
1/4 tsp black or white pepper

Put it all in a blender, pulse carefully about 10 - 15 times
blend till pureed

If needed, put in a little more liquid till the consistency is right for you

Heat up in a pot until as warm as you like
Put a dollop of strained yogurt (or sour cream) on top


Have a great pumpkin of a day, or night
