Plantain Fritters...

We grow plantains on Pilgrim's Farm and what we don't sell...
sometimes are more than we can use up for ourselves...


we hang them from the rafters underneath the cottage and pull them off the stalk as we use them


when the plantains start getting quite ripe, it's time to use them up
fritters are one way to use them and makes a sweet snack or dessert without using extra sugars
if you cannot get plantains, ripe bananas will work

for 4 people or more, the ingredients are:
1 large or two small plantains
1/2 cup flour (I use gluten-free flour due to celiac disease)
1/4 cup shredded unsweetened coconut
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1 teaspoon of lime or lemon zest
couple of squirts of lime or lemon juice
optional ingredient: I like to use farine for texture in the fritters, but it isn't necessary
farine is dried cassava and used often in making breads and cereal for a gluten-free lifestyle


peel, dice and mash the plantain...
add the nutmeg, cinnamon, salt, lime/lemon juice and zest...
mix it in well


add the coconut (and farine if your using it) and mix them into the mashed plantains


add the flour and stir in well


put in enough oil (I like to use coconut oil) to cover the bottom of the pan
when the oil is hot...
put in the plantain dough by a tablespoon and flatten slightly


let the fritters fry until golden brown on the first side...
turn over (using two forks works easiest)...
and fry until golden and crisp


take the fritters out and you have something pretty delicious to eat
I like to squirt some lime juice on mine to give the fritters a bit more complex taste
