Quick and easy soups that have both nutrition and taste
on a busy day cannot be beat...
The cow peas can be cooked (just until tender)
a day ahead...
and the rest of the ingredients thrown in and cooked in about 15 minutes
This recipe will serve 6 to 8 people
Ingredients
2 cups cow peas (or any legumes on hand) - soaked overnight
2 cups chopped pumpkin
2 cups cut up cauliflower
6 cups of vegetable broth
2 Tbsp tomato paste
1 medium onion - chopped
3 garlic cloves - minced
1 sprig thyme
1 tsp tumeric
1 tsp sea salt (or to taste)
1/2 tsp black pepper (or to taste)
Directions
Cook soaked cow peas in 4 cups of water on simmer till almost tender (about 35 to 45 minutes)
Add the rest of the ingredients and simmer for another 15 minutes, checking on the liquid quantity - add more broth or water if needed.
That's it. No other work needed.
You can also do this in a crock pot.
