A Smoothie or Ice Cream...?

Let's just call it...
ice cream smoothie


If you like coconut milk, bananas, peanuts, chocolate...
this recipe is for you.
All you need are those four items...
a blender and freezer proof glass dish.
Simple, simple, simple.
Who doesn't have most or all of those within reach at home...
or at the nearest market.


For 4 servings (double it for more):
take 2 cups coconut milk
4 small bananas, cut up
1/2 cup shelled slightly roasted peanuts
(if you're allergic to peanuts, leave it out - it will still taste good)
and 4 squares of semi-sweet chocolate
if you want, add a splash of vanilla extract

Put them all in the blender...
blend on low until completely blended and smoothed together.
At this point...
you can stop with this step and have yourself a smoothie...
or...


Put the mixture into a freezer proof glass/plastic dish...
cover and freeze for about 4 to 6 hours.
Take it out and put back into blender, letting it melt just a bit...
blend for a couple minutes and put back into the freezer for another 4 to 6 hours or even better, overnight.


You now have homemade ice cream.
Either way, it's pretty good and easy to make.
