Polenta in my Kitchen...

My husband and I do like polenta

we grow our own corn from heirloom seeds to ensure non-gmo and organic food

we grow enough to feed our chickens with and have plenty for our own cornmeal


once the corn is plenty dry...
the kernels are easy to shuck off the cob

we used to take the corn to a local man who ran the corn through his grinder...
but, we learned that it is best to keep the kernels on the cob...
as they keep their protein better

in the future...
we will keep the corn on the cob and hung up...
and grind what we need at the time we are ready to use it
we are looking for a good table top grain mill to do our own corn grinding

when I feed it to the chickens...
I just shuck the kernels off a cob as they gather around me for their daily portion of corn


today, I made one of our favorite corn dishes...
polenta

from 2 cups of ground corn meal...
I make about 6 cups of polenta

in a pot, put in 4 cups of water and bring to slow simmer
in a bowl, stir in 2 cups of cornmeal into 2 cups of coconut milk
slowly pour into the simmering water, stirring to avoid lumps
cook over a low heat for about 20 minutes, stirring often
turn off heat
add 6 TBsp of butter
1 tsp of sea salt, or to taste
1/2 tsp of pepper
1/4 tsp of ground nutmeg
2 cloves of minced garlic
pour into greased pans and let cool
the polenta will thicken as it cools

once it has thickened, you can slice it up and fry it or eat it anyway you want

corn is a great blessing from God

Foiled...!

Whenever I see the signs of a corn loving creature...
trying out my corn ears to see if they are ready...
then, I know it's time for action


I don't have any personal vendettas against rats...
but, this corn was grown for my consumption

so...
with that in mind and after some pondering on how to discourage the field creatures...
I took off the bottom leaves of the corn stalks...
and wrapped foil around the bottom

I figure if cats and dogs don't care to touch foil...
perhaps it will work with rats...
something about the feel and sound of aluminum foil...
which I quite understand


I checked this morning on the corn...
so far, so good

and while hopefully the rats have been foiled in their attempt to feast on my corn...
the little lizard fellow on my corn is quite welcomed

isn't he wonderful? 
how God painted him with pretty colors and tiny delicate markings 

he keeps the grubs and other buggies out of my ears...
corn ears, that is

Corn is Capital!...

Through the years,
I wasted so many great ears of corn
 by the boiling method...
which leaches out much of the nutrients and taste.


our corn is ready to harvest in field number one...
so are the ones on the stalks against the cottage


I took a couple of ears...
they couldn't have looked better


forget the boiling method...
let's go roasting (or grilling);
then...
slather with good old fashion real butter
and sprinkle with the true taste of real sea salt

 oh yum!

It's a Corny Day...

I do love corn still on it's cob...
fresh picked off the stalk...
and eaten raw right out of it's husk
We've got corn ready for harvesting...
and you can bet, I'll be taking some for ourselves...
before they get to market

With a corn field right out our side yard...
it just takes a few steps down the hill...
for these real beauties

Don't you wish you had hair like that...?

my Mom said she could never do anything with it
I still can't do anything with my hair :(

You can see the cottage from the corn field...

Foxie and I kept going down the field...
picking...
and then, got sidetracked

the goat...
our farmhand's goat who enjoys the jungle below our farm...
well...she sure likes corn on the cob, too...
so, I gladly fed her a couple

And, still being sidetracked from corn picking...
We took my rock path into the cacao grove

and, came upon our Ms. MooMoo...
who gave Foxie a suspicious glare...
and me a curious look (I'll take the curious look over the glare)

Heading back to the corn field...
we stopped by the bee hive...
it was looking busy with bees...
so we kept our distance

I love this spot below...
where a grove of trees give an umbrella of shade

I picked a couple leaves for tea...
and took the corn up to the cottage

And, when I pulled the husks from the corn...
oh my! I just couldn't wait...
to sink my teeth into it
Sweet, tender and juicy...
just like it promised!
