Green Banana Recipe (and gluten free!)...

Given the choice between a green banana and a ripe one...

honestly, I take the green
Ripe bananas don't appeal much to me...
more due to texture than taste

In any case, I've got a very simple recipe for green bananas...
it's much like making mashed potatoes
All that is needed for 4 to 6 servings are:

8 small or 5 large green bananas
2 tbsp of butter
(sour cream or yogurt can be substituted)
1 to 2 cloves of garlic
(depending on your taste for garlic or chopped parsley can be substituted)
1 tsp lemon/lime zest
a few drops of lemon/lime juice
sea salt and pepper to taste

Put a little water in a pot with a touch of oil
(the oil keeps the banana sap from clinging to the pot)
Snip the ends off the bananas
(this brings out some of the starch, keeping the bananas from being goey)
Put them into the pot with skins on and cook for 15 - 20 minutes
(or until a knife goes through the skin easily)

Cool the bananas until they can be handled...
peel and dice them
Mash them with a masher or fork
Grate the garlic with a zester and add to the mashed banana and stir in well
(do not overstir the bananas - they may become gloopey)
Stir in the butter, salt & pepper
and, well...

that's it...
you can now eat
