His Way is Perfect...


As for God, His way is perfect:
the word of the Lord is tried:
He is a buckler to all those that trust in Him.


For who is God save the Lord?
or who is a rock save our God?
It is God that girdeth me with strength,
and maketh my way perfect.

The Lord liveth;
and blessed be my Rock;
and let the God of my salvation be exalted.
Psalms 18:30-32,46

Green Banana Recipe (and gluten free!)...

Given the choice between a green banana and a ripe one...

honestly, I take the green
Ripe bananas don't appeal much to me...
more due to texture than taste

In any case, I've got a very simple recipe for green bananas...
it's much like making mashed potatoes
All that is needed for 4 to 6 servings are:

8 small or 5 large green bananas
2 tbsp of butter
(sour cream or yogurt can be substituted)
1 to 2 cloves of garlic
(depending on your taste for garlic or chopped parsley can be substituted)
1 tsp lemon/lime zest
a few drops of lemon/lime juice
sea salt and pepper to taste

Put a little water in a pot with a touch of oil
(the oil keeps the banana sap from clinging to the pot)
Snip the ends off the bananas
(this brings out some of the starch, keeping the bananas from being goey)
Put them into the pot with skins on and cook for 15 - 20 minutes
(or until a knife goes through the skin easily)

Cool the bananas until they can be handled...
peel and dice them
Mash them with a masher or fork
Grate the garlic with a zester and add to the mashed banana and stir in well
(do not overstir the bananas - they may become gloopey)
Stir in the butter, salt & pepper
and, well...

that's it...
you can now eat

A Walk in the Morning...

A walk in the morning with my dogs


the day starts beautifully
I grab a cup of cafe con leche
and we head on up the road


the breeze is blowing cool...
the birds are singing everywhere...
  busy bees are humming...
the butterflies are fluttering around the bush


sunlight rays shine through the trees


we head down past the emerald trees...
passing papaya trees growing wild


hanging my empty cup on a papaya branch...
to pick up later as we pass back home


we continue on our way
peaking through dense trees


seeing glimpses of the sea


walking under a vine covered tree...
I see a moth clinging to a leaf...
upside down


peeping through more trees...
I see a way to a mountain cave


we keep on going past our emerald forest...


and I stop to admire the very green moss...
growing on the mountainside


more emerald forest...
vines hanging everywhere


there is always a nest or two


and the ever present web makers of the forest...
quietly weaving


catching more glimpses of the scenery


we take a hike up the mountain...


to better view this emerald island...


and take in the forest lined road view from on top

The Making of a Cottage ~ part 5...

It was a rainy day...all day on Saturday
(but it was absolutely lovely...we do like an all day rain from time to time)
It was so rainy...we couldn't get out of the car...
too wet, too muddy
The outside around the cottage needs finishing touches
I can happily say, though...
the cottage itself is finished
The appliances are coming this week
and the potager garden needs laying out with the design I worked on
By December, the Lord willing, we should be transfering items from our current home to the cottage

Coffee & Coconut...

What do coffee and coconut have to do with each other...?

Well, not much unless, you want to think differently in terms of what creams your coffee.
I do like a cup of coffee in the morning...
sorry...but, my opinion is...
coffee is not so bad for you in moderation.
People have been drinking it for thousands of years.
What is bad are the pesticides some growers use.
On our farm, we are growing a few trees ~ no pesticides

So...about this coconut cream in coffee...
if you eschew dairy products...
coconut milk or cream is absolutely the best.
To be honest, I make my own coconut milk...
but, if you cannot come by it freshly made...
canned should do.
I put a couple of big spoonfuls in mine. Honest, it's good.
